We grew up making rice krispie treats as kids, you know the ones with gooey marshmallows and melted butter, but you will seriously LOVE these healthier Frankenstein rice krispie treats! We’re swapping out the marshmallows for creamy peanut butter, honey and vanilla for some sweetness, then making them festive by adding green food coloring and fun candy eyeballs. These monster treats make the perfect addition to your Halloween party and your kids will love them! You also don’t have to make these just for Halloween, skip the green food coloring and and make these delicious rice krispie treats any time!

Ingredients You’ll Need

  • Brown rice cereal – I used this crispy brown rice cereal as the main ingredient in this recipe, but you can use classic Rice Krispies if you prefer
  • Peanut butter – this takes the place of traditional marshmallows and holds the bars together. I used creamy peanut butter, but any nut butter will work in these or even sunflower butter if you have a nut allergy
  • Honey – naturally sweetens these bars without using any refined sugar, but you can also use maple syrup if you want to keep these vegan
  • Vanilla extract + salt – boosts of flavor!
  • Green food coloring – this is a must to make them look like Frankenstein! Any type of green food coloring will work
  • Spooky additions – you’ll need some fun candy eyes, pretzel sticks and black candy melts (regular chocolate chips will work too, but will be more brown than black)

How to Make Frankenstein Rice Krispie Treats

  1. Mix the wet ingredients. In a medium saucepan over low to medium heat, stir together the peanut butter, honey, vanilla and a pinch of salt until melted and all combined. You could also melt the ingredients in a microwave-safe bowl in the microwave in 30 second intervals, mixing each time, until all combined.
  2. Add rice cereal. Turn the heat off the stove and add in a few drops of green food coloring. Whisk together until the mixture is the shade of green you want then add in the brown rice cereal, mix until all is combined and the cereal is completely coated.
  3. Let bars set. Transfer the rice cereal mixture to an 8×8 baking pan lined with a piece of parchment paper (or nonstick cooking spray) and spread the mixture out using a spatula, pressing it down to evenly flatten the treats and pack everything down. Cover the pan and place in the fridge for at least 3 hours until the treats are set. Carefully remove the treats from the pan and cut into 16 bars.
  4. Decorate! Add black candy melts (or chocolate) in a small bowl and microwave in 30 second intervals, mixing each time, until melted. Cut a small slit at the tip of a plastic baggy or piping bag and add melted candy melts. Slowly pipe the hair and squiggly mouth onto each bar and use the melted chocolate to ‘glue’ the candy eyes on. Alternatively, you could dip the tops of the bars into the melted chocolate. Trim the pretzel sticks and place them on either side of the bars as the bolts, using the candy melts again as glue. Carefully press them into the bars so they stick.

Tips for Making Frankenstein Treats

  1. Make sure the peanut butter is mixed well as you want it to be nice and thick to hold the mixture together.
  2. Use a spatula to mix the crispy rice cereal with the rest of the ingredients which prevents sticking and helps spread the mixture out in the pan. Make sure to press down firmly so that the mixture is packed and holds together when set.
  3. You can easily swap out the peanut butter for any type of nut butter! Some other great options are almond butter, cashew butter and even sunflower seed butter if you have a nut allergy.
  4. I find that using parchment paper makes it much easier to remove the treats from the pan in order to cut them evenly, but you can use nonstick spray if that’s all you have.
  5. You’ll want to refrigerate the bars for at least 3 hours (or even overnight) to really make sure the bars are set and are firm enough to cut so that they won’t fall apart.
  6. The melted candy chocolate is not only decorative, but acts as glue to stick on the eyes and hold the pretzel “bolts” on the sides of these bars.
  7. If making a bunch of rice krispie treats (perfect for parties!), feel free to double this recipe and use a 9×13 baking dish.

Prepping and Storage

To-Store: These cute Frankenstein rice krispie treats can be stored in a sealed, airtight container for up to 1 week in the fridge. Before serving, let them sit for a few minutes at room temp so that they soften a bit and enjoy!

To Freeze: These can also be frozen for up to 3 months in a sealed, airtight container or you can individually store them in plastic wrap and take them out separately to thaw.
